THE PANCAKE RULES.

Pancake day is coming up + everyone knows their topping is the ultimate. For Shab, it's loads of maple syrup. L keeps it traditional with lemon + sugar, while Lou is all about nutella + banana. For Frankie + Beth the clear winner is berries with nut butter or honey.

However you like to top your pancakes, try these recipes below (one plant-based, one not) + send us your photos. As always, cheap + cheerful with not too many nasties.

Banana pancakes - serves thick pancake-like-you-mean-it pancakes for 2ppl
2 x banana (£0.40)
2 x egg (£0.30)
100g x oats (£0.08)
Oil, for frying - coconut, sunflower, rapeseed, vegetable

1. Heat a frying pan on medium heat with a tsp oil.
2. Whoosh up the banana, egg + oats in a blender (or mash the banana, whisk the egg + combine with the oats if you don't have one - lumpy but still delicious).
3. When the pan is hot (5 mins of heating), put a spoonful of mixture in the pan.
4. Fry on one side until the edges start to firm up, then flip (be brave, go high).
5. Put your oven on low heat (80 degrees) + put the pancakes on a plate in the oven whilst you make the rest to stop them going cold.


Plant-based pancakes - serves fluffier-than-the-clouds pancakes for 2ppl
150g x plain flour [all purpose or wholemeal works too] (£0.04)
2 tbsp x caster sugar [leave out if having savoury toppings] (£0.06)
2 tsp x baking powder (£0.10)
1/2 tsp x salt (£0.01)
300ml x water or plant milk of choice - we like oat milk (£0.15)
Oil, for frying - coconut, sunflower, rapeseed, vegetable

1. Heat a frying pan on medium heat with a tsp oil.
2. Mix the flour, sugar, baking powder + salt in a bowl.
3. Add the water/milk + mix. If you have a whisk, use it now.
4. Use a ladle or large spoon to put the mixture in the hot pan.
5. Fry on one side until the edges start to harden + bubbles appear, then flip (make the crowd gasp).
6. Put your oven on low heat (80 degrees) + put the pancakes on a plate in the oven whilst you make the rest.

To make it a fuller breakfast, why not add greek yoghurt, chopped nuts + pear to your pancakes? Or to make it into an evening meal, add spinach, feta + roasted vine tomatoes.
